All those, who have not done any real cooking yet, this tempting Thai is the right recipe for you. It is quite tempting that has been inspired by Sweet Basil in Norman. Though, it can’t be claimed that this version is traditional because I always love to add a twist into recipes to come out with the better taste. In tradition recipe, tomato is used while I have used bell pepper instead of tomatoes.

Ingredients To Be Used
- Coconut oil or premium quality of vegetable oil – 2 tablespoons
- Fresh pineapple (chopped) – 1and ½ cups
- Red bell pepper (diced) – 1 large
- Egg – 2 (optional)
- Green onions (chopped) – ¾ cups
- Garlic (pressed or minced) – 2 cloves
- Cashews (unsalted) – ½ cup chopped
- Brown rice (cooked) – 2 cups
- Chili garlic sauce – 1 or 2 tablespoons as per your preference
- Soy sauce – 1 tablespoon
- Lime – 1 small
- Fresh cilantro leaves – cut into small pieces
- Salt as per your taste
Procedure to Prepare Thai Pineapple Fried Rice
Heat a nonstick frying pan over medium heat. Once the pan gets hot enough that a drop of water sizzles when it comes in contact, add 1 tablespoon of oil. Pour eggs and stir frequently until the eggs get scrambled for at least one minute. Transfer these eggs into an empty bowl and wipe out the pan. (If you are looking for a completely vegan recipe skip this step)
Add one tablespoon of oil into the frying pan. Once the oil gets hot, add red pepper and pineapple into it. Stir it constantly until the pineapple caramelized at the edges of the pan. It will take 3 – 5 minutes. Then add garlic and green onion into it. Stir continuously while cooking until it gets fragrant. It will take around 30 seconds. Once the mixture is cooked transfer it into the bowl of egg.
Reduce the heat and add 2 tablespoons of oil into the frying pan. Add cashews into the frying pan and cook until it gets fragrant. Stir continuously until the cashews become little brown about at least 30 seconds. Add the cooked rice to the mixture and stir to combine all the ingredients in the pan. Cook until the rice becomes hot while stirring occasionally. This will take around three minutes.
Take the bowl of the contents that were in step 2. And pour the contents into the pan. Stir the ingredients to combine. Break the scrambled eggs with a spoon (if added) and cook until all contents become hot. Remove the pan from the stove and add chili garlic sauce and soy sauce for a better taste. Take half lime and squeeze the juice of it onto the mixture and stir to combine. Add salt for seasoning for a better taste as per your choice.
Cut the remaining half lime into four pieces. Transfer the fry contents into serving bowls and garnish each bowl using lime pieces and sprinkle cilantro onto the content. Serve with soy sauce and chili garlic sauce to offer a better taste.

The dish tastes better the next day so store it in the refrigerator and heat up the next day to enjoy the delicious taste.
