  • 1 ½ cup of properly sliced mushrooms
  • ¾th cup of cubed cut onions
  • ½ cup tomatoes properly chopped
  • ½ inch ginger
  • 2 cloves  of garlic
  • 5 to 6 cashews
  • 1 ½ tbsp oil
  • 1-2 piece of bay leaf
  • 2  piece of green cardamoms
  • 1 cinnamon stick  medium size
  • ½ tsp red chili powder
  • ½ tsp of garam masala
  • ½ tsp coriander powder (optional)
  • ¼ tsp  of kasuri methi
  • Salt as per taste
  • Fresh coriander leaves finely chopped
  • 2 tbsp of fresh cream

Preparing the gravy for cooking for Mushroom Curry:

Take ¾ of cubed onions, ½ cup tomatoes, 2 garlic cloves, ½ inch ginger, and 6 cashews. Put it in a blender jar. You can blanch the onions before cutting into pieces.  Now mix them in the blender for about 2 minutes or till it forms a smooth paste. Do not add any water. Keep the gravy aside.

Take 1 and a half spoon of oil in a pan and heat it.  Now saute bay leaf, cinnamon and also cardamoms. Saute till the time it sizzles. Now add the onion tomato gravy puree and keep cooking till the time mixture starts thickening. Cover the pan while cooking or mixture may splash.

Add 1/2 spoon of red chili powder, 1/2 to 1 spoon of coriander powder and 1/2 spoon of garam masala. Continue Sautéing keeping the flame low till the time mixture starts leaving the sides of the cooking pan.

Now add the freshly chopped mushrooms. After 1 minute add salt as per taste. Saute it for about 2 to 3 mins. Add a cup of water and keep cooking till the time mushrooms become soft. If you want you can add more or less water in the pan.

Keep the flame on till the time gravy reaches the desired consistency with adding water if required by you. Sprinkle some Kasuri methi and Cover the pan. Now switch off the flame.

Pour the dish on a serving plate or bowl.  Now garnish the dish with finely and freshly chopped coriander leaves.  Add few tbsps of cream before garnishing with coriander leaves.
