Hot Cauliflower Roasted Curry- Yummy Healthy Recipe for a Perfect Vegetarian side Dish

So what are the ingredients of this Tasty, Healthy and Yummy Dish?

  • Large cauliflower 1 piece – Cut into averagely sized florets
  • Sunflower oil- 2 tbsp
  • Sea salt – 1 Tsp
  • Cinnamon stick – 1 stick
  • Green cardamom with seeds crushed – 4 piece
  • Cloves – 4 pieces
  • Bay leaves – 2
  • Cumin seeds – 1 tsp
  • Medium onions finely chopped – 2
  • Tomatoes finely chopped – 2
  • Green chilies without seeds and roughly chopped – 2
  • Fresh ginger finely chopped – 30g
  • Tomato purée – 4 tbsp
  • Sea salt- 1½ tsp
  • Kashmiri chili powder – ½ tsp or you may skip
  • Garam Masala – 1 Tsp
  • Kasthuri methi- 2 tbsp
  • Honey – 1 tbsp
  • Full-fat yogurt- 3 tbsp
  • Bunch of fresh coriander finely chopped

Cooking Instruction to Make This Mouth-Watering Seasonal Cauliflower Dish:

Getting the Oven ready:

First Heat your oven to 200°C. Place the cauliflower florets inside a roasting tin. Now toss it with oil and salt.

veg recipesPlace the cauliflower florets tin in the oven and roast for about 20 minutes. Now take the tin out keep aside once cooked.

Curry preparation for the roasted cauliflowers:

For the curry, first, take a saucepan with medium lid.  Heat up oil keeping the gas in medium flame in a pan. Now put cinnamon, cloves, cardamom, bay leaves and also cumin seeds. Cook the spices for about 1 minute until the time you notice them sizzling.

Now add chopped onions, tomatoes and green chilies one by one and keep stirring. After a minute add ginger and again mix. Now Cook for about for 15-20 minutes and keep stirring it occasionally.

Once you find the mixture has turned soft and brownish than remove it from heat and keep aside. Allow it to get cool for next 5 minutes. Using a spoon remove the cloves and cinnamon stick. Allow it to cool down for 5 mins

Take the cooked spices in your mixing container or blender.  Mix it for 2 mins in the mixer to make a smooth paste.

Take the paste back in the saucepan and add the tomato purée.  Use a medium flame for cooking. Sauté it well before adding 200ml of water.  Wait till it comes to boiling state; now cover it with the lid and simmer for another 20 minutes. Ensure you are still using a low flame. As per taste Add salt, chili powder, Kasthuri methi, garam masala, and a spoon of honey. If you want you can replace honey with 1/2 spoon sugar. Now stir it all well.

Put the roasted cauliflower right in the curry. Add yogurt, and stir. Now cover it to cook for 10 minutes more.

Plating to Make it Ready for Serving:

Now Take a serving plate and pour the dish. Garnish it with chopped coriander leaves.  Spread a spoon of yogurt and sprinkle black pepper for a yummy taste. Serve it hot with Phulka or Indian bread.
