Ingredients for the Chicken

  1. Chicken breast both skinless and boneless.
  2. 1tsp of olive oil
  3. 1tsp of ginger and garlic paste
  4. 1tsp of spices powder
  5. 1 cup mix of parsley, coriander, and green spring onions.
  6. Salt and pepper to taste

Ingredients for the Salsa

  1. A ½ cup of the white part of the spring onions finely choppednon veg recipes
  2. 1 cup of cherry tomatoes
  3. ½ cup of green or black grapes.
  4. 1tsp of finely chopped green chilies
  5. 1 yellow bell pepper chopped.
  6. 1 tsp of finely chopped parsley
  7. 1tsp of chopped coriander leaves
  8. 2 Basil leaves
  9. 1tsp of lemon juice
  10. 2tbsp of olive oil
  11. Salt and pepper to taste

How to cook Grilled Chicken Escalope with Fresh Salsa

  • For the home-made spice powder add fennel seeds, star anise, a small cinnamon stick, and ground pepper. Roast them and then grind to powder form.
  • Keep it aside away from the water and moisture.
  • Now, blend parsley, the green part of the spring onions, and coriander leaves into a smooth green paste.
  • Marinate the chicken breast with salt and pepper, spice powder and the green paste for about half an hour.

  • Cook in a non-stick pan or grill it or bake it.
  • For the Salsa, toss all the ingredients for the salsa in a large bowl, refrigerate it and once the chicken is ready, garnish it with the fresh Salsa.
